Instead of the traditional bean sauce, we use fresh tomato puree to create a naturally sweet and tangy base, making it gentle, kid-friendly, and full of flavor. Tender eggplant adds creaminess and antioxidants, while pan-seared trout fillet provides high-quality protein and omega-3s to fuel brain development and growth. Eggplant is a soft, versatile vegetable that’s gentle on little tummies and rich in important nutrients. It contains dietary fiber to support healthy digestion and regulate bowel movements, while its antioxidants — particularly nasunin, found in the purple skin — help protect developing cells from damage. Eggplant also provides small amounts of vitamins like vitamin C for immune support and vitamin K for blood and bone health, along with minerals such as potassium and manganese that aid growth, metabolism, and heart function.
