Additionally, pumpkin includes other vital nutrients such as vitamin E, fiber, folate, vitamin B6, vitamin C, iron, potassium, and more. Carotenoids are present in high amounts in pumpkin, which are plant compounds that can be converted by our bodies into vitamin A. They also have antioxidant effects that can reduce the risk of cancer and address natural cell damage. The carotenoids' concentration increases with the pumpkin's curing duration after harvest.
